Vasilios "Billy" Liakakos

Founded by Restaurateur Vasilios Liakakos whose passion has once again brought him back to his roots, with a desire to showcase true Greek cooking in a way like it is done in Greece. Having been in the dining industry in Georgia since 1995, he was inspired to bring a modern translation of authentic Greek fare to the Roswell dining scene while transporting you to a favorite Greek village. With an affection for the foods he grew up on his dishes are infused with traditional flavors and techniques of classic Greek cuisine; prepared with fresh ingredients creating a style that is pure, light, and healthy. His expectations are to immerse you in a true Greek experience that goes beyond the amazing flavors of the food.
Pure, Light, and Honest

Pure, Light, and Honest

The VAS philosophy starts with the ingredients: garlic, lemon, rosemary, olive oil — each one allowed to speak. Nothing complicated that doesn't need to be.
A Room That Feels Like Greece

A Room That Feels Like Greece

A space designed to transport you into the feeling of Greece, not just a theme. This Downtown Roswell concept has been a staple since 2018 and reflects Vas's return to his Greek roots through a fresh, lighter take on “True Greek Cooking,” inspired by his Greek upbringing.

Complemented by imported wines and beers, including Mythos Hellenic Beer and curated Greek wines.

Eater Atlanta, DiningOut, and the Quality Business Awards have all taken notice. But the truest measure is the guests who return again and again, drawn to the signature saganaki flame, warm hospitality, and consistent craft that defines the experience.
